Amount of starch in \"Karukan\" was determined as follows : \"Karukan\" was homogenized and washed with water, and then hydrolyzed with hydrchloric acid. Reducing sugar yielded by hydrolysis was measured with a modified Somogyi method. The reducing sugar was expressed as glucose. Digestion test on starch was carried out with taka-diastase, and on protein was done with pepsin.
